Ordering
Can I reserve bread or viennoiserie?
Of course. Call us on +33 1 42 36 18 27 or drop by the counter the day before: we will set your order aside for whatever time suits you. For custom cakes, allow 72 hours notice.
Can I place a last-minute order?
For bread and viennoiserie, call us the same morning: if the batch allows it, the answer is yes. For entremets and tiered cakes, though, our 72 hours notice is non-negotiable — pastry does not like being rushed.
How does a custom order work?
You describe the occasion, how many people and what they like. Our head pastry chef calls you back to settle flavours, size and decoration, then sends a firm quote within 24 hours. You collect it in store on the day.
Do you deliver?
Not for private orders: a tiered cake travels badly, and we would rather hand it to you ourselves. For corporate events of 20 people or more, delivery around the bakehouse in Paris is possible.
Our products
Do you make gluten-free products?
No, and we would rather say so plainly: we have a single bakehouse and wheat flour travels everywhere in it. We cannot guarantee the absence of traces, so we do not offer gluten-free products.
How can I check the allergens in a product?
The full allergen list for every product is displayed at the counter and available on request. If you have a severe allergy, tell us before ordering: we will be straight with you about what we can and cannot guarantee.
Is everything made on site?
Everything, without exception: breads, viennoiserie, pastries. The starter has been kept alive in the bakehouse since 1987, the croissant dough is laminated by hand, and nothing arrives frozen.
When is the best time for a warm baguette?
The tradition baguette is baked four times a day: at opening, late morning, early afternoon and around 5:30 pm. So there is almost always a warm batch waiting for you.
Do you offer vegan products?
Our sourdough breads are naturally vegan: flour, water, salt, starter, nothing else. Viennoiserie and pastries, however, are built on butter and eggs — we have no vegan version of those today.
Keeping and serving
How should I store sourdough bread?
Wrap it in a linen or cotton cloth, cut side against the board. Never in the fridge: cold dries the crumb out within hours. A 48-hour sourdough keeps happily for four to five days.
Can I freeze bread?
Yes, and it is the best solution. Freeze it sliced, in a well-sealed bag, on the day you buy it. The slices go straight into the toaster, no thawing needed. Three months maximum, to keep the full flavour of the starter.
How do I reheat viennoiserie?
Three minutes in a 320 °F oven and the lamination gets all its crispness back. Never the microwave, which softens the butter and slackens the dough. Best of all is to eat them the same morning, still warm from the bakehouse.
What can I do with stale bread?
The great classic: French toast — milk, eggs, a veil of sugar, into the pan. Blitzed, it becomes homemade breadcrumbs for gratins and coatings. Cut into croutons and baked with a trickle of olive oil, it lifts any soup.
How should I serve an entremets?
Take it out of the fridge 20 minutes before serving: the aromas wake up. Cut it with a blade run under hot water for clean slices. And eat it the same day — mousses do not wait.
Payment and practicalities
Do you accept meal vouchers?
Yes, meal vouchers (card and paper) are accepted for lunch deals, sandwiches and ready-to-eat items, up to the daily legal limit.
Is a deposit required for a custom order?
Above €80, we ask for a 30 % deposit when the quote is confirmed. The balance is settled on collection. Cancel more than 48 hours ahead and the deposit is refunded in full.
Is the shop accessible?
The shop threshold is step-free and the central aisle takes a wheelchair. The toilets, however, are upstairs and are not accessible — we are sorry about that.
