Every loaf ferments for 24 to 48 hours on a natural starter, with no added yeast. Farm flours, stone-ground in the Paris region.

Strawberries and verbena in summer, mirabelle plums in early autumn, chestnuts and citrus in winter: the window follows the harvest of the orchards nearby. Seasonal creations are flagged at the counter — and disappear the moment the fruit does.
The lamination is done by hand every afternoon, with Charentes-Poitou AOP butter. Nothing else, and above all nothing frozen.
